- Sweet Potato Fries
1kg Sweet Potatoes
1tbsp Black pepper
1tsp Salt
1tbsp extra virgin Olive oil
- Ground Beef
750g 5% Fat Lean Beef Mince
1tbsp extra virgin Olive oil
4 Garlic cloves, minced
1tbsp Curry powder
1/2tbsp Salt
1tbsp Cumin
1medium red Onion, diced
5tbsp Water
Directions
- Wash the potatoes under the tap and use a knife to
remove some of the dirty bits on the skin. Then slice into
shapes of thick fries. - In a big bowl, place the potatoes and add the salt,
pepper and 1tbsp oil. Mix well and bake in a pre
heated oven at 175C for 20mins. - To cook your beef: Break up the beef first. In a small pot,
add the olive oil, minced onions and saute for a few minutes. - Pour in the beef, garlic cloves, curry powder, cumin and
water. Pop the lead on and cook for 8-10mins. Drain and
serve. - To meal prep: Place 261g of spicy sweet potato fries
and 228g of ground beef into 3 separate meal prep containers.
